Pillows...Or Pita Bread....

Growing up we were a Wonder Bread, Scali Bread type of family.  The first time I had a piece of pita bread was when I was a teenager.  The pita bread was served at a Lebanese restaurant that I had been invited to by a friends parents.  I loved it then and I still love it today.  Why I waited so long to make  pita bread is beyond me.  This recipe is quick, easy and you will love how they puff up. 
Here's the recipe.....
1 tablespoon yeast
1 ¼ cup warm water

1 teaspoon salt
3 ½ cups flour

Dissolve yeast in water for about 5 minutes in the bowl of an electric mixer.   Add salt and 1 ½ cups flour and with the dough hook, beat to make a batter.   Add additional flour until a rough mass is formed.   Knead 8 minutes until dough is smooth and elastic.   Add more flour if dough is too sticky.
Turn dough onto a lightly floured surface and divide into ten pieces for smaller pitas .   Form dough into balls, then flatten with a rolling pin into ¼ inch thick discs. Try and keep an even thickness as this is what helps them ‘puff’.
Let rest on the floured surface 30-40 minutes until slightly puffed.
Preheat oven to 425F.
With a large spatula, flip the rounds of dough upside down on to a b
aking sheet.   Bake 10-13 minutes until golden. 

One of the things I really liked about this recipe is the quantity it made.  There should be enough for most of this weeks lunches.

  2. Wow! Your pita bread turned out great. The first time I actually had it was when my ex-mother-in-law would serve it warmed up and stuffed with salad and sour cream. Boy was it good! Who knew that one day I would be married to an Arab man, living in a Middle Eastern country, surrounded by pita bread everywhere I go. :) Have a great day! Tammy

  7. These look amazing...once again I'm astounded at how the same ingredients turn out so many different kinds of bread. How and why does the 'pocket' form in these? I can't believe those huge puffs you got!! This looks like a fun project, can't wait.

  9. WoW! I can't believe you make your own. Many years ago, I worked at food service place that did a lot of natural food. There was nothing better than driving to pick up the fresh pita bread so you could get one hot out of the oven. I'm very impressed.

  10. They look so light and fluffy I'd have to fight the urge to flatten them LOL like the store brand! I'll bet they are a thousand times better! Mmmm, what will you be stuffing them with?

  19. It has been years since I've made Pita Bread! Yours puffed up gorgeously. Imagine how much goodness you can put in one of those. Yum!

  28. Oh! This is too funny!I just made pita bread last evening and had it as soppers for a good Minestrone Soup! I was thinking the remainder of the rounds would make great lunches too! Great minds think alike! Your pitas puffed much more than mine. I only had one of eight puff up like a little brown cloud! The rest are perfect but not puffed!

  29. Excellent!! Mine never puff like that. Do you think it is because of the humidity here in Florida? I also have difficulty in making breads rise and have to add wheat gluten, especially in the summer months. I can just imagine how tasty your pitas are, waiting to be stuffed with some wonderful fillings. Have fun.
