Everyone has their own recipe for Zucchini Bread. This is the recipe I use. These little loaves are very moist and amazingly light.
Mix together:
- 3 cups flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 1/4 tsp. salt
- 3 eggs
- 1 cup oil
- 1 cup brown sugar
- 1 cup white sugar
- 3 tsp. vanilla extract
