Like everyone else these days, I am in love with kale and eat it when ever I can. This soup has just the right amount of spice from the garlic, heat from the chorizo and creaminess from the white beans. Delicious!
Ingredients:
- 1lb. chopped kale, large stems removed
- 3/4 lb. chorizo, casing removed ( its usually 2 links)
- 1 red onion, chopped
- 3 cloves minced garlic
- 2 carrots diced
- 2 medium red potatoes, diced
- 32 oz. low sodium chicken broth
- 3 cups water
- 1 14.5 oz. diced tomatoes
- 1 tbsp. chicken base
- 2 bay leaves
- 2 cans cannellini beans rinsed and drained
- 2 tbsp. olive oil
- salt and pepper to taste
Add the chicken broth, water, tomatoes, chicken base, drained beans and simmer for 45 minutes. It's ready that quick. Enjoy!
Ha! Must have been the snowstorm and the need for cozy soups! I made minestrone yesterday, which is crazily close (Happy Valentine's Day, soup soul mate!) to your wonderful White Bean and Kale. Had it with garlic bread and red wine for our supper ... so good, huh?

ReplyDeleteHappy Valentine's Day; I love Kale and juice with it. This dish sounds wonderful but I must admit I've never had Chorizo-sounds really spicey so not sure. I'm not sure I've ever eaten cannellini beans either but I love beans so I'm sure I would like this.

I love a soup that doesn't have to cook for hours- I can make it after work and still have dinner at a decent time! This one is perfect for the snowy days we've been having. :)

ReplyDeleteThis looks delicious! I make several different soups with white beans (I like the creamy texture). Adding the sausage makes it a hearty meal. I use chorizo in my lentil soup but never tried it with the white beans and kale. Thanks for the recipe! xx
