My neighbors were kind enough to invite me over to pick some of the wild blackberries that grow in their yard. I am so happy I did. The jam is delicious and so simple to make. Recipe from Paula Deen.
INGREDIENTS:
5 cups blackberries, washed and drained
1 tablespoon lemon juice
7 cups sugar
1 (1.75 ounce) package dry pectin
6 (1/2 pint) Canning Jars with lids
Directions:
In a large saucepan over high heat add blackberries, sugar, and lemon juice. Stir frequently while bringing to a rolling boil. Stir in pectin and continue boiling for 1 minute. Remove from heat and skim any foam from the top if necessary.
Sterilize jars and lids directly before using for 10 minutes in simmering water or in the dishwasher. Remove one at a time when ready to fill. While blackberry mixture is still hot, ladle into the hot sterilized jars, filling to within 1/4 inch of the top. Wipe rims with a clean damp cloth and seal jars with lids and rings. Process in a boiling water bath (making sure water level is 1 inch over the top of the jars) for 10 minutes. Remove from water bath and allow to cool on the counter.

First of all, I want to thank you for stopping by and visiting my blog! Second,I can see where your coming from in thinking this recipe has an outrageous amount of sugar. The blackberries I used this time around were quite tart so the sugar helped to counteract the tartness of the blackberries. I tried out a recipe and simply wanted to post about the results. You can take from it what you will and adjust it to your liking if you decide to make blackberry jam in the future.

ReplyDeleteSo funny that I saw this post as my daughter and I were picking blackberries yesterday and she asked I make a pie or jam. They are everywhere now and once they start growing in your yard.. you're in trouble because they vines are tough to remove. Your jam looks so good! Enjoy your weekend!

ReplyDeleteOh Yum!!!! You can't beat homemade jam, and blackberry is one of the loveliest! I picked lbs and lbs from the hedgerows this year and stuck them straight in the freezer so I didnt leave leave them languishing in the fridge, and so hope to make some too soon. But everyone is cross with me as they see all these tubs of ice cream then get disappointed when they see they are full of blackberries instead, he he!

Hi and thank you for your compliment, The recipes are all on my blog and if you type in the search bar at the upper left hand corner of the blog you should find them. For instance type in pear or Gorgonzola, corn , tomatoes and chicken all separately and you should see every recipe with that word in it, Scroll down the blog until you find what you are looking for..
