I have been on a mad eating frenzy that can only rival that of a hungry Great White Shark feeding off the coast of Seal Island, South Africa. Not a pleasant sight to be sure. Suffice it to say I have been eating anything and everything since Thanksgiving. If it wasn't nailed down I was eating it. It's a good thing my arms are attached to my body or I'd be typing this post with a pen in my mouth.
I've decided to give myself an intervention. I will be eating salads from now until Christmas. If I can make them as delicious as this one, I will be more than happy to give up the junk food. I devoured this salad just as hungry sharks usually do.
Pink grapefruit, avocado and feta cheese are the stars in this healthy salad. I supremed my grapefruit in a bowl and then sliced the avocado and placed it in with the grapefruit sections and juice.(the acid in the grapefruit juice keeps the avocado from turning brown) I took a large handful of baby greens and wild arugula and put the grapefruit, feta and avocado on top. I added a small amount of extra virgin olive oil to the juice along with Fleur de Sel and pepper then poured it over the the whole thing. I will absolutely make this again. Maybe next time I will add a thin slice of red onion. YUM!

ReplyDeleteThat looks so different and unique. I have heard that grapefruit and avocado make a wonderful combination but I've never had it. I think I would love your salad here. Great photo too!

ReplyDeleteTo be honest I am not much of a salad eater I am a meat, potatoes and cooked veggie person with an every now and then dash of sweets for desserts ! Never been to fussy on veggie and fruit salads ! But I must addmit it does look good ! Enjoy ! Have a good day !
ReplyDeleteThis is one of the best looking salads I've ever seen. The flavor combination really comes through in your photo. And that feta looks almost creamy---yum! I can't get enough citrus these days, it just tastes so refreshing after binging on all the comfort foods.

ReplyDeleteOh my gosh, we are sisters separated at birth! I too have eaten everything that is not nailed down since Thanksgiving. I watch my weight all year long, then for some unknown reason, Thanksgiving comes and all heck breaks loose. I always gain weight, but come January, I get on the straight and narrow road to losing weight. Just a vicious cycle! Your salad looks delicious, but I'll save them for the summer time. Right now, it's cookies, pies, stuffing, bread and everything I can stuff in.

What is it about this time of year that makes us eat so much? I think once you get the carb/sugar cravings going it is hard to stop, and so much food is in front of us right now, I have been over indulging as well. You are stronger than I, as I will wait til the holidays are over. This week I will be baking cookies, oh my.

What an interesting combination! I love feta and avocado but don't normally pair them together. The grapefruit sounds so refreshing. I applaud you for trying to eat healthy this time of year :) It can be a challenge!
