Summer Herbs And Baked Eggs....


Who doesn't love fresh summer herbs?  I know we are crazy about them around my house.  One of the ways we like to use them are in Ina Garten's baked eggs.

Ingredients  for Herbed- Baked Eggs
  • 1/2 tsp. minced fresh garlic
  • 1/2 tsp. minced fresh thyme leaves
  • 1/2 tsp. minced fresh rosemary
  • 2 tbsp. minced fresh parsley
  • 2 tbsp. freshly grated Parmesan cheese
  • 4 extra large eggs
  • 3 tbsp. light cream
  • 2 tbsp. butter
  • salt and pepper
Preheat broiler for 5 minutes and place the oven rack 6 inches below the heat.
Combine the herbs and cheese set aside.  Crack 2 eggs into 2 small bowls without breaking the yolks.  You won't be baking them in these bowls.
Place 2 individual gratin dishes on a baking sheet.  Place 1 1/2 tbsp. cream and 1 tbsp. butter into gratin dishes.  Place under broiler for 3 minutes. Quickly, but carefully pour the eggs into each dish.  Sprinkle evenly with the herb mixture, salt and pepper.  Place back under the broiler for 5 minutes until whites are almost cooked.  There will be herb mixture left over.  This recipe is for 4 servings.  Just refrigerate the rest for another time.  My daughter and I like to add baby spinach to the cream and butter when it comes out of the broiler before the eggs go in.

    2. I can vouch for this fabulous recipe. We have made Ina's herbed baked eggs many times. It is always a winner. The fresh herbs in this easy dish really make a statement. Awesome recipe.

    11. I love Ina's baked eggs! There's nothing like fresh herbs with eggs...love them in omelets too. This dish is such an elegant breakfast for company yet easy enough for family.

    12. Just about a week or so ago I saw Ina make these on her show, and I fell in love. Everything from the shape of the pan, to the bubbling cream, to all those herbs. This dish just seems so quintessentially European and elegant, and makes me interested in eating eggs again! I like your idea of adding the spinach.

    15. oh those herbs look so summery...love the recipe too...i know..can you believe those leaves ? there is one grove that turns every year right around the 4th of july...but we were on our way to the beach for SNOWCONES!!!!

    18. That looks amazing!!! I would love this! :) I'm envious of your fresh herbs! I have a lot of shade trees around my apartment so I just don't get enough sun to for them to grow very well. :( But I'll look for some fresh thyme in the grocery store because I'd definitely love to make this! :)

    20. I saw a recipe for baked eggs in a tart in one of my B&B cookbooks. Thought I would make it for my Wimbledon breakfast but everyone wanted the french toast.

    26. OH, what a wonderful post ~ I love my summer herbs and yours look beautiful.....and as for eggs,I have recently added 3 laying hens to my menagerie, and I am looking forward to their first lay.....in about 2 to 3 weeks, as this is their first year!
