Eggplant Goodness.....


What do you think, aren't these eggplants just gorgeous?  They are fresh from the farm and ready to be whipped up into something delicious.  I have a day or two to decide on how I'm going to cook these beauties.
It has been my experience that bloggers are some of the most creative individuals, so please put on your chef hats my friends and pour out some yummy ideas for me.  Any and all ideas or suggestions will be greatly appreciated.


After a very long week my computer is back from the shop and in great shape.  It might take me awhile to catch up with everyone.  It's amazing how much I missed reading and commenting on everyone's blog.

  1. So glad you got your computer back. It is funny that you posted pictures of eggplant today. I picked some from my garden this morning and I am going to fix Eggplant Parmesan tonight for dinner. I just found a recipe off of the internet just because I have never made it before. With step by step directions. :) I really enjoyed Ratatouille when my daughter fixed it.

  3. I made ratatouille a very long time ago - we loved it!! But I love it fixed any way - mostly I prepare it rather 'plain' to just soak up the natural flavor of it. You've made me SO very hungry for eggplant... must go find some. now. :) Enjoy!! -Tammy

  4. I've been wanting to photograph eggplant lately too---they're so glossy and gorgeous! I once saw a recipe for lasagna using eggplant slices instead of noodles and it looked great. Glad you got your computer back...

  9. Those are gorgeous! My suggestion is to roast them over a gas flame until shrivelled and black, then let cool, peel off the skin and mash the flesh with some crushed garlic, salt, a drizzle of olive oil and a dollop of Greek yoghurt for an amazing and easy baba ghanouj dip!

  10. Welcome back! Your eggplant looks so pretty, but I have to admit it is one vegetable I have never eaten. I am attempting to grow it in my garden this season per my mother's request. Eggplant lasagna does sound delicious! Hope you are staying cool,sending greetings from Maine, Julie.

  12. Welcome back! I love aubergine (as we call it over here.) Have you ever made Babaganoush? It's so good you must try it. Or as Farmgirl suggests above a wonderful, layered Parmesana Melitzana would be good. Or very simply cut it into cubes and roast it with some garlic and olive oil!!! Yum yum yum!

I used to be fascinated by these gorgeous vegetables, and then one day I made a delicious looking recipe with cheese, and as I was eating them, I had a vision of eating slugs. I almost threw up. Since then... I can't even look at 'em. A strange experience from the Twilight Zone, I guess. :)

  14. Great looking eggplants!
    My kids love eggplant as a filling for ravioli! Saute it with garlic, salt and pepper, add some parm cheese, a little mozzarella, some bread crumbs, whatever you like. Use fresh pasta sheets or won ton wrappers. Any sauce. It's really good!

    fry in hot olive oil.
    simple and good with a salad for lunch or entree for dinner

  22. welcome back !!! when my computer went down in May...i got so depressed i went to bed one day.... 10 days without it...it was getting fixed at Best Buy...yikes....and then i come and see this...guess what's on my drainboard RIGHT NOW !!! eggplant !!! i got them saturday at farmers market...i am making eggplant parmesan tonight out of my Rao's cookbooks...are you familiar with Rao's. I LOVE his cookbooks...

  29. What lovely eggplants!! My favorite is to bread them and pan fry in EVOO. Yummy. Mine are still just growing, so it will be a few weeks until we have any to eat. Enjoy. Oh, and good for you....driving so far to get good free range eggs!!! Kuddos!!

  32. For some reason we call these Aubergines, I much prefer Eggplant! I can honestly say I have only eaten them in a Moussaka. x
