We love our cranberries here in New England and will bake and cook with them all through the holidays and beyond. Cranberry Nut Bread is a fall favorite. It is quick, simple and delicious. Try it and I'm sure it will become one of your fall favorite's too. Here is the recipe.
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice
- 2 tablespoons vegetable oil
- 1 tablespoon grated orange peel
- 1 egg well beaten
- 1 1/2 cups cranberries coarsely chopped
- 1/2 cup chopped nuts
Preheat oven to 350F. Grease a 9 by 12 inch loaf pan. Mix together flour,sugar,baking powder, baking soda and salt in a medium mixing bowl. Stir in orange juice, oil, orange peel and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Oh this sounds lovely. Cranberries haven't hit the shops yet here although I have some in the freezer from last year. I think this is one to be made it looks delicious

ReplyDeleteWe love Cranberries in my house. My hubby has jam on his toast each morning and I have made cranberry cookies from a recipe my friend gave me. I will certainly try this one for the loaf as I have company coming on Friday and I have plenty of berries that I have picked, all five gallons of them....thank you soooo much for sharing the recipe...I love maple...anything...but unfortunately, do not have any maple syrup right now. I would love to try the cookies as well...

I always take a loaf to my Mom and Dad too, as they like a tangy break from banana nut bread, which is their staple quickie. Thanks for the reminder that it's time to bake the quick breads!

ReplyDeleteYour dog has the most beautiful face and eyes. It's like her soul comes right out at you. She's beautiful in looks and who would not love her! She's amazing, I can tell. I have an amazing Rottweiler named Serenity (Nitty for short) and it's so sad because she is so gentle and loves people but they have such a bad reputation and people are scared of her. But she is actually changing that..one person at a time here in our little town. Even people that don't like dogs or have them will comment on her good behavior and gentleness (although I do hope if push came to shove she would be there to defend me?). I don't goo-goo ga-ga over many dogs, I love them all but there are some that you can just tell are very special and yours is. You're a lucky owner and she's lucky to have you too. I always say...they chose you...you don't chose them. I have another dog too I'll tell you about another time. I can't wait to make the cranberry bread as I love cranberries but just never think to make it. Plus...where did you get your silverware? I love it! I have been looking for a nice daily set with colored handles and I love red...those are really beautiful. Anyway...thanks again....love your posts!
