This is one of the easiest recipes you will ever make. You need one box of spice cake mix and one 15 oz. can of plain pumpkin. Mix together the dry spice cake mix with the canned pumpkin. No oil, no eggs, no water. Just the dry cake mix and the canned pumpkin. Scoop into a muffin tin and bake for 15 to 20 minutes. I sprinkled diced walnuts and raw sugar on top. These are wonderful! They also make the perfect mini muffins for your breadbasket at any meal. Check your mini muffins after 8 minutes.

ReplyDeleteSomeone actually posted this with a yellow cake mix which I tried and didn't like so much, but I bet with the spice cake mix it is absolutely delicious. I threw in some pumpkin pie spice with mine but it wasn't the same. They do turn out moist though. We don't get the spice cake mix here. :/ Your muffins look yummo for sure.
