Here is the recipe. Bee careful you don't eat to many.
Honey Muffins
- 2 cups whole wheat flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 chopped walnuts
- 1 cup raisins ( I used golden raisins )
- 2 eggs
- 1/4 cup orange juice
- 1/2 cup vegetable oil
- 1/2 cup honey
- 1 tsp. vanilla
- 1 tsp. grated orange peel
- 1 cup shredded carrots
Preheat oven to 350 degrees. Line muffin tin with paper liners. In a large bowl, combine flour, baking powder,cinnamon, salt, nuts and raisins. In small bowl, mix eggs, orange juice, oil, honey, vanilla, and orange peel. Stir the liquid ingredients into dry ingredients, Stir in carrots. Spoon batter into muffin-pan cups.. Bake for 20 to 25 minutes. Makes between 15 and 18 muffins.
Guess I just found my Monday's muffin batch for this week! These look awesome and I just bought a fresh jar of orange blossom honey ... good to go! Have a great week, wherever you buzzzzz!

ReplyDeleteThese look delicious! I love muffins because they are perfect for when the kids have sleepovers. They can bake them the night before for fun - and then enjoy them in the morning for breakfast!

ReplyDeleteI do love honey, we're trying to eat as much local honey as possible too... there's a big shortage of honey bees in the UK at the mo so a lot of our honey comes from as far away as Mexico of all places!... lovely looking muffins, great recipe as usual!

Thanks for your comment over at my place .....by law we work 190 days with the children and have 5 "teacher training' days. Although we seem to have lots of holidays spaced through the year, we don't get your long summer break. We have between 5 and 6 weeks in July/August.
ReplyDeleteWe have one week at the end of October, two weeks at Christmas, two weeks in Spring (Easter), and generally one week at the end of May. It means our terms are never longer than about 7 weeks, which suits me fine! How does your year work out?

ReplyDeleteThese look very good, I would exchange the 1/2 cup of vegetable oil for 1/2 cup of pear sauce or apple sauce :O)... I can pear sauce since I can't eat apples, :O) allergic...
