Cranberry Nut Bars...


If there is one thing I enjoy this time of year its my fireplace.  I have the kettle on and as soon as my tea is brewed I am going to sit down in front of the fire and enjoy my tea and these delicious cranberry bars.  Here's the recipe adapted from Food.com

Ingredients:
2 eggs (beaten)
1/2 cup butter (softened)
1 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup chopped nuts
2 cups cranberries chopped (fresh or frozen)
Orange rind from one orange

Directions:

Beat together eggs, butter, sugar and vanilla.

Add flour and baking powder and mix well.

Fold in nuts, orange rind and cranberries.

Pour into greased 9 x 12 cake pan.

Bake@ 350 degrees 40-45 minutes .

    1. Yes, I believe you could use dry cranberries, but I would cut done on the amount of sugar.

  3. Cranberries are fabulous this time of year. A couple of these bars and a cup of tea or coffee in front of the fireplace? That just rocks.

  4. MMMMMmmm! These look something I will have to make for Thanksgiving! I know I am going to love them especially when I saw they have so much orange zest in them. That adds so much flavor. A nice cup of hot tea and one of these bars, yes please!

  5. I am so making these in the morning. Oh my gosh they look so yummy. I went crazy last week buying cranberries so now I know what I will be doing with them. You take such good photographs of food.

  6. Yummy ! Oh yes please hehe . Sounds like what I love to do only I have my tea by the fire with a piece of home made cake or pie ! Things seem to taste better with a cup of tea to wash it down doesn't it ? Thanks for sharing the recipe . Have a lovely evening , going to get Papa and my evening cup of tea now !

  8. Tea by the fire, I will be right over! We don't have to knit do we? A bit of gossip, a cup of tea, and one of your bars. I'd be in heaven! Our neighbor has a bog and just gave us a big bag...I was thinking cranberry vodka...but that may be on hold!

  18. I made these bars last night as a trial run. They were amazing. Ted loved them so much I didn't think he would quit eating them. I will make a batch for the ICU nurses on Thanksgiving. We will enjoy them so much. Thank you.

  27. I made these last night and could hardly wait for them too cool. This morning I couldn't wait to have one with a cup of coffee. They are DELICIOUS! Thank you for passing along a wonderful taste of Fall. By the way, I used my Pampered Chef nut chopper to chop the cranberries. It worked great and I had the cranberries & nuts ready in 5 mins and no runaway cranberries on my kitchen floor either. This one is a keeper and I will now be stocking my freezer with cranberries - just in case I need something tasty with my coffee.

  29. I made these today and they were very tasty with our afternoon coffee. Mine did not look like your picture. Mine were very crumbly and developed a sort of crust on top. I followed the recipe: 1 stick butter, 2 eggs, etc. My cranberries had been frozen and might have been too juicy after chopping. Could that have made the difference?

    1. The recipe said you can use fresh or frozen but I always use fresh. I wonder if that is the difference. Sorry they did not come out as expected. I'm glad they were tasty though.
