Time for Lemon Thyme Cookies...

I only make these cookies in the summer time when my lemon thyme is in abundance.  These delicious cookies are crisp on the edges and soft in the middle.  Here is the recipe !!
  • 2 1/2 cups flour
  • 1 tsp. cream of tartar
  • 1 cup softened butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 tbsp. lemon thyme
Directions...
  1. Sift together flour and cream of tartar
  2. Cream butter and sugar in separate bowl
  3. Add eggs, mix well
  4. Blend in the flour until incorporated
  5. Fold in lemon thyme
  6. Chill for 2 hours then roll into balls the size of walnuts
  7. Bake on a silpat sheet for 10 to 12 minutes
I made a quick sugar glaze to spread on top with powdered sugar, lemon zest and lemon oil from my King Arthur outing.

    3. OOOOHHH, do these sound fabulous! I've tried thyme lemonade but never thyme lemon cookies! I'll just have to find some lemon oil for the icing and I'm all set. I have tons of lemon and lime time. I like it as a ground cover as well as an herb. Thanks for sharing!

    9. What pretty cookies and the flavor sounds amazing! I've put lavender in cookies but I never tried lemon thyme. I should make a batch of both while I have both herbs growing so well in my garden.

      And i do i do have lemon thyme. I knew there was a reason for planting it!

      these look so good....what a beautiful photo..
      i have lots of lemon thyme so i am making these...do you have that HERBS Cookbook by emelie tolley and chris mead ? 1985. there is a recipe in there for lemon tea bread that uses lemon thyme and lemon balm..i grow it just for that recipe..and thanks for the tip on the gingham cupcake liners...i WILL double them...i loved them too.

    15. I've only just come across your blog but it looks so inviting and inspiring, I can't wait to work my way through it.
      The cookies look amazing. Oh my....I'm going to be soooo busy! Its winter here in Melbourne but the baking always disappears in our house no matter what the recipe!
      By the way, I love your photography and Bella looks adorable too.
